3 medium Potatoes
2 Eggplants
4 medium Onions
3 Tbsp Oil
6 Tbsp Horse Gram flour (basin)
1/2 Tbsp Ginger, minced
3 Green chilies, minced
1/2 tsp Turmeric powder
Salt to taste
1 tsp Sugar
1 tsp Red chili powder
A pinch Asafoetida
1 can Coconut milk
1/2 cup Coriander leaves, chopped
Dice potatoes and eggplant. Slice onions thin, lengthwise. Pour oil in a saucepan. Add horsegram flour and stir till it turns pink. Remove from fire and mix with ginger, green chilies, turmeric, salt, sugar, chili powder, asafoetida. Meanwhile cook eggplants, onions and potatoes. Add this mixture and coconut milk to vegetables and cook. Garnish with coriander leaves.
